Coconut Crusted Tilapia

INGREDIENTS:

1 cup unsweetened coconut

2 Tbl flour

1 Tbl Cajun seasoning

1 tsp garlic powder

4 6 oz tilapia fillets

1/2 cup flour

2 eggs

½ cup canola oil

DIRECTIONS:

Mix coconut, 2 Tbl flour, Cajun seasoning and garlic powder.   Dip fillets in remaining flour, then egg and then coconut mixture.  Press mixture onto fillets. Fry in coconut oil.  Serve with apricot sauce.

Apricot Sauce

Mix together:

½ c apricot jam

2 tsp brown mustard

1 tsp horseradish
