INGREDIENTS:

1 pike (2 pounds)                        

3 Tbl flour                                    

2 Tbl brown sugar                       

Butter                                           

Cinnamon

Cloves

1/2 cp apple juice

1 Tbl honey

Finely grated lemon rind

DIRECTIONS:

Wash and dry pike thoroughly and cut into 4 peices.  Dredge in a mixture of the flour and brown sugar.  Place in a well-buttered pan and sprinkle with cinnamon and several cloves. 

Bake at 350o for 35 minutes.  Halfway through the cooking, baste with the apple juice sweeten with honey.  Sprinkle grated lemon rind over the pike.
