INGREDIENTS:

5 Tb Vegetable oil          

2 cps peeled, julienne ginger  (approx 1/2#)

1 1/2 # trout fillets, cut into 1/4’ strips

3 1/2 Tb sugar

2 Tb soy sauce

2 Tb fish sauce

1 tsp salt

1 lg. sweet onion (Spanish), thinly sliced

1/4 red bell pepper, julienne

1/2 bunch green onions, cut into 1” pieces

DIRECTIONS:

Heat oil in skillet, med high heat, add ginger, stirring until brown and crisp.  Add fish, stir gently, cook for about 3 min.  Add next 5 ingredients, stir well. Add onion, cook for 3-4 min, then add red pepper and scallions, cook for 2 min.

Serves: 4
